No need to spend hours frying and smelling up your house with these Easy and Healthy Baked Latkes. These crispy Oven-Baked Baked Potato Latkes are crispy on the outside and soft in the middle. Baked in the oven, not fried! Skip frying and try baking. Don’t worry, they will still be crispy.

Baked Latkes

Ingredients

  • 2 lb potato, shredded or grated
  • 1 onion, shredded or grated
  • 2 egg
  • 1 salt
  • 1⁄4 cup matzo meal, or flour
  • 1⁄4 tsp baking powder
  • 1 nonstick cooking spray
  • 1 black pepper

Directions

  1. Preheat oven to 425°F.
  2. Drain excess liquid from potatoes. Mix all ingredients in a large bowl.
  3. Spray two baking sheets.
  4. Add latke mixture by 1/4 cup; flatten.
  5. Bake 15 minutes; turn latkes; bake 10 minutes longer.
  6. Serve with applesauce or sour cream.
