Tex Mex Meatloaf

Ingredients

Non stick cooking spray
1 egg, lightly beaten
1/2 cup salsa
1/2 cup chopped bell pepper
1/4 cup onions, chopped finely
1/4 cup cilantro, snipped
1/4 cup quick cooking oats
12 oz uncooked, ground turkey breast
12 oz lean ground beef
2 tbsp salsa

Directions:

1. Preheat oven to 350° F. Lightly coat an 8 x 4 x 2 inch loaf pan with cooking spray.

2. In a large bowl, combine egg, the 1/2 cup salsa, bell pepper, onion, 1/4 cup cilantro
and oats. Add the meat and mix well. Lightly pat mixture into the prepared loaf pan.

3. Bake 40 minutes. Spoon the 2 tbsp salsa over top of meat loaf, spreading evenly.
Bake for 10 minutes longer or until an instant read thermometer inserted in meat loaf
registers 165° F. Let stand 10 minutes before serving.

4. Remove from pan to serving platter with 2 long spatulas and slice. Serve topped with
fresh salsa and/or additional cilantro, if desired.
