Broccoli Cheese Soup is one of our favorite quick and easy meals at any time of year! Perfect for lunch, or an easy weeknight dinner with a salad. Not only that, it’s some of the best soup I’ve ever tasted, period. If you like Panera’s broccoli cheddar soup, this blows the pants off it.

Easy Broccoli Cheese Soup

Ingredients

  • 3 can (14 1/2 oz each) chicken broth
  • 2 bag (1 lb each) frozen broccoli
  • 1 can (10 1/2 oz) tomatoes and green chili pepper
  • 10 oz Velveeta reduced-fat cheese

Directions

  1. Mix chicken broth, frozen broccoli and tomatoes, and chilies together.
  2. Simmer for 25 minutes or until veggies are tender.
  3. Cube Velveeta and put into the soup pot.
  4. Simmer just until cheese is melted.
  5. This recipe freezes and refrigerates well.
